Rachel Khoo's Grapefruit Curd and Black Pepper meringue tartlets

Two of my kids, adults, enjoyed Thursday night viewing here with a few good foodie shows. Shane Delia presented one and Rachel Khoo another called "Little Paris Kitchen". Every episode I had seen these in the opening and couldn't wait to see what they were. Finally we saw her make these delicious looking meringue tartlets.


Today I made them and we shared them for afternoon tea with my parents. I read another person's blog who had changed them to lemon and omitted the pepper. Please don't! I've often thought grapefruit has a sharp peppery taste and the pepper just brings out the real flavour of the grapefruit. I even ground a little pepper over the top. (After the photo)
Measure out everything for each section before you start it. It makes it go much quicker and the result will be perfect. Mine were a little dark because I didn't have the dessert rings so I used a muffin tin, so I ended up with eight instead of six portions. The biscuit is crisp and light and you could use it for other fruit tarts or eat them plain! Definitely use a piping bag, even if only a heavy plastic one without the nozzle. The base is a little thick at first but after doing two it gets warm and soft.
